Italian turkey meatballs

Ground beef is like whoa expensive now. So much that at $2.59 a pound ground turkey makes sense. I've been buying these 4x1.5lb packages and then cutting into 6 cubes and flattening each out into a burger. Freezing separately on parchment (waxed didn't hold up and need freezer paper) on a cookie sheet and the stacking separated by the parchment cut up. 
I was trying to come up with ideas and tried chili but that didn't work. These meatballs are a combo of Rachel Ray's, Giada's, and one on Epicurious. 

1# ground turkey
1/4 C plain bread crumbs
1 egg
1/2 to 1t  Italian seasoning
Ground black pepper
Grated hard Italian cheese (1/4C or optional or more)

Preheat oven to 400. Mix all lightly until even. Scoop out 1.5-2" balls an place them on an oiled or lined (silpat) cookie sheet. Bake for 15-20min. Serve with standard spaghetti sauce over noodles or on a bun
