Yum. I had some cod that I got in a bag at the store and I wanted to beer batter. I checked a bunch of places including (http://www.foodnetwork.com/recipes/paula-deen/beer-battered-fish-and-chips-recipe.html). One of the most helpful things was a comment somewhere that was just 1:1, 1 ounce flour to 1 ounce beer. So cup and a half to a bottle for like 2lb fish. I had less fish so I made 1cup each and drank the rest. You can put some salt pepper and garlic powder in the flour before you gently whisk it together. Then, counter intuitively, you let sit from 1-5 hours.
A very strange but unexpectedly successful thing Deen does to dust in flour after dipping in batter. Works!
Then fry in 350F oil.
